Ingredients:
2 ripe mangoes, peeled and diced
1/2 cup sugar (adjust to taste)
1 cup milk (you can use coconut milk for a richer flavour)
1 teaspoon vanilla extract
1 envelope (about 7 grams) unflavored gelatin
2 tablespoons water
Instructions:
Step1
In a blender or food processor, blend the diced mangoes until smooth. Set aside.

In a short bowl, scatter the gelatin over the water. Let it settle for a few minutes to bud.

In a saucepan, heat the milk and sugar over medium heat until the sugar is dissolved. Do not let it boil.

Remove the saucepan from the heat and stir in the bloomed gelatin until it's completely dissolved.

Stir in the mango puree and vanilla extract until well combined.Pour the mixture into individual serving glasses or a large serving dish.
Step6
Let the pudding cool to room temperature, then refrigerate for at least 2-3 hours, or until set.
Once the pudding is set, you can garnish it with additional diced mangoes, whipped cream, or mint leaves before serving.
