Quick Sticky Toffee Puddings

Ingredients:

2 tablespoons chopped dates

2 tablespoons hot water

2 tablespoons all-purpose flour

1 tablespoon brown sugar

1/4 teaspoon baking powder

1/8 teaspoon baking soda

1/8 teaspoon vanilla extract

For the Toffee Sauce:

2 tablespoons unsalted butter

2 tablespoons heavy cream

2 tablespoons brown sugar

1/4 teaspoon vanilla extract

Instructions:

In a microwave-safe mug or bowl, combine the chopped dates and hot water. Let them sit gently.

Add the flour, brown sugar, baking powder, baking soda, vanilla extract, and a pinch of salt to the mug. Mix well until the beaten is bland.

Microwave the mug on high for about 1 minute and 30 seconds to 2 minutes, or until the pudding has risen and is firm to the touch. The exact cooking time may vary based on your microwave's power.

While the pudding is cooking, prepare the toffee sauce. In a separate microwave-safe bowl, combine the butter, heavy cream, brown sugar, and vanilla extract.

Microwave the sauce mixture for about 30 seconds to 1 minute, or until the butter is melted and the sugar is dissolved. Whip well to make a smooth sauce.
